Sanjay Paswan has worked as a chef for almost 30 years at leading hotels, resorts, restaurants, and flight kitchens, preparing a la carte meals in India, the USA and the Middle East.
However, he has returned to his roots and has been preparing Indian food at another restaurant in Orange for the past four and a half years.
With his family on board, Mr Paswan has now opened his own restaurant at 116 Summer Street.
Son Nachiket Paswan works at the front of house and said although it hasn't been open long it has already been popular.
"Maithil, that's the place where I'm from and Rasoi means kitchen," Nachiket said.
"[My dad] has cooked for [ late restaurateur] Gary Rhodes, he made some butter chicken for him, he's passionate about it."
Cider returns
Small Acres Cyder has new owners and its popular products are back on the shelves. Nick and Janine Geoghegan took over the business after previous owners James and Gail Kendell sold up to go to the UK.
Mr Geoghegan said he came to Orange when he was working with the DPI but Mr Kendell helped him transition and the staff have stayed on.
Mr Geoghegan said the focus has been on getting the traditional cider, pear cider and non-alcoholic cider, back on shelves and at the re-opened cellar door.
"We are slowly getting back into the bottle shops and the pubs around town," he said.
Lolli Redini reopens
Co-owner of Lolli Redini and recently opened Birdie, Leah Morphett has been acknowledged in the 2020 Australia's Wine List of the Year Awards.
This is the eighth time she has won the award since 2009.
"We are small so we tend to stay small and keep the list within out budget," she said.
"The new list for our reopening is short and sweet, though still takes into account the same criteria."
The Sale Street business will be open for Friday and Saturday evening trade only. Take-away food will continue on Tuesday, Wednesday and Thursday.
The restaurant also takes inquiries for dine-in functions.
