Orange Showground and its Naylor Pavillion will play host to the event, with gates to open at 8.30am and close at 12pm.
Among the offerings from stallholders will be hemp honey, produced and bottled by Hungry Bee's.
Chris Anderson said the opportunity to work with another set of stallholders - Tina and Angela from AT Hemp - had accelerated the innovative project, made from hemp grown near Forbes.
"We both sell our produce through Orange Farmers Market and Bissy's Café, and we decided to co-brand honey," Mr Anderson said.
"In terms of the bees, hemp has really good pollen. It's a good food source for bees at this time of year, when ... bees need protein."
Mr Anderson said the honey had benefits beyond taste.
"The hemp oils are great for cholesterol, and hemp also has Omega3," he said.
"We'll be the first in the Central West. You'll definitely know which is the hemp honey from its colour - it's quite green."
Admission to the market is via a gold coin donation.
