The restaurant closed its doors more than a week ago but that has enabled another door to open for Orange chef Scott Want.
Mr Want will open a new bistro-style restaurant in the Selkirks building, in a sense enabling him to return to his roots.
Mr Want worked at the restaurant for seven years alongside owner-chef Michael Manners. Mr Manners is credited with putting Orange on the map as a fine dining destination with his Selkirks Restaurant, which opened in 1997.
In 2002 the restaurant was awarded two hats in the prestigious Sydney Morning Herald Good Food Guide.
Mr Want will open Bistro Ceello with his wife Melanie Winter.
“I learned so much when I was working there with Michael - it was awesome, and so Melanie and I are really looking forward to this experience,” he said.
Mr Want said Bistro Ceello will have a more relaxed style than the Selkirks but will still have a strong emphasis on local produce and local wines.
“Melanie and I have three children now and we chose the name by using a combination of letters from their names,” he said.
Mr Want said he intends to open for dinner from Wednesday to Saturday and for lunch on Friday. He plans to open in November.
Selkirks restaurant was named after “Selkirks Grace” a well known ode to food by Robbie Burns.
Mr Want will move from the Union Bank to take on his new role.
