While the major days, Brew and Bite, won't be the same as originally intended, they will go ahead and hopefully to great success.
This is largely due to some of the food vendors, market stallholders and entertainment providers having to withdraw from Brew and Bite because of the lockdown in Greater Sydney.
"There's little bits and pieces [missing], but overall we still have the market stalls, food vendors, we've got entertainment, but probably not the variety and the amount that we would have had, or the space," Ms Welch said, noting the footprint of the festival has been reduced.
The vendors and stallholders that attend will need to wear masks and have hand sanitiser available.
Patrons will also be asked to wear masks and council will monitor numbers in the festival precinct.
Ms Welch admitted it had been a challenge to change the plans at the last minute.
However, she said council had been prepared for a situation like this, and the response was made easier by the willingness of everyone to work together on adapting Brew and Bite to comply with the new health orders.
"It's been a bit challenging, but we have been working with COVID for quite some time now and we did have loose plans in place, because you can never really know what's going to happen and when, so we had a bit of an idea what to do if we had to," she said.
"But the team at council is just so incredible. Everyone just got in, everyone understood the changes, all the staff, all the vendors and all our suppliers, everyone's just so understanding of change and things that have to happen quickly and just working together."
