But the NSW Government's COVID rules for regional NSW ultimately forced the cancellation of the charity event which raises money for the Cancer Council.
Mrs Jones was devastated by the postponement to a date unknown.
"This has been 13 weeks of some of the hardest work we've ever done," she said.
"We were really looking forward to a great night and it was so disappointing to see the looks on everyone's faces."
She believes that regional NSW has "has copped it a bit excessively" from the Government.
"I totally understand the need to prevent people from getting sick, but given that people could still dance at weddings in Sydney on the weekend, but we couldn't dance in a town which hasn't had a COVID case in over a year just seemed a little unfair," she said.
"I'm hoping that it will be rescheduled and get to perform it in front of a huge crowd again some time."
The new restrictions, which would have meant mandatory facemasks, no crowd dancing and a strong of other implications, were brought in just three hours before the event was due to take place.
Ricky Puata is the community lead for Cancer Council Western NSW and said: "We are so grateful for your continued support and understanding, and we apologise for any inconvenience or disappointment this decision may cause.
"We are actively working with our stars, dance schools and stakeholders to look for a new date. Please also note that your current ticket will be valid for this new event date."
