On both Friday and Saturday nights the Northcourt will be transformed into a festival hub, when the travelling food market finds its way to town.
More than 30 international food stalls will set up shop in Orange, having made their way around the state.
The food line up includes paella, dumplings, American style Philly-cheese-steak rolls, twist potato chips, fairy floss, dutch pancakes and deep-fried donuts, Bubble iced tea, gozleme, souvlaki wraps, sliders and more.
The market stalls will spend two nights in Orange en route to around 20 regional towns in NSW.
The Aussie Night Market also visits around 10 Sydney suburbs each month.
The travelling food festival will bring jumping castles, teacup rides and 'a flying car' - in addition to its line up of international foods.
There will be live music on both nights and boutique retail vendors.
Organiser Sam Adams said it keeps them all pretty busy.
"We invite everyone to bring their friends and bring their families and have a good night," said Mr Adams.
The Aussie Night Markets begin at 4pm and run until about 9pm on Friday and Saturday night at Northcourt, at the corner of Peisley and March streets.
It is an alcohol free event.
Entry to the market is a gold-coin donation, with $20 wristbands for unlimited rides and single tickets available. ATM on site.
Furry friends are welcome to attend provided they are kept on a leash.
