The market's busiest period, a 36-hour selling marathon in the lead-up to Christmas, is expected to draw 100,000 customers.
About 700 tonnes of seafood is expected to be bought and sold.
Prawns remain the most popular purchase, with the market expected to sell about 120 tonnes of the crustacean.
But new healthy eating trends are seeing whole fish, sides of salmon and barramundi take centre stage in the festive feasts, the market operators have noted.
The market will remain open until 5pm on Christmas Eve.
