A mainstay on Orange's coffee scene for over a decade, Mr Moon has opened up his own cafe, calling it 'Harley & Hem Coffee Brewers'.
The 34-year-old will run the business alongside his partner, Ashlee Maguire, and the cafe's name is inspired by family too.
"Harley is my grandfather, who worked in hospitality most of his life, and Hem is my mum," Mr Moon said.
"Opening up our own business has been on the cards for a while, so we just went for it."
Mr Moon said the main focus of Harley & Hem will be coffee - cold brew, filter brew, single origins, to name a few.

"We'll have ready-to-go food options and fresh juices, too."
Harley & Hem Coffee Brewers opened up last week at 113 Byng Street, near the Police station, and will continue to open five days a week - 5.30am to 2pm, Monday through to Friday - throughout the lockdown for takeaway.
GONGS FOR GREATER
Greater Bank' customer service has been recognised as part of Canstar's 2021 customer service awards.
The Orange-based institution picked up two most satisfied customer awards -in the customer-owned bank and online banking divisions.
Canstar's customer satisfaction awards are based on how content customers are with a particular financial institution and complement its star ratings and awards that are calculated by Canstar's researchers.
Greater Bank has been operating in the Central West since 1998 and has branches in Orange, Bathurst and Dubbo.
GEE, THIS IS GREAT
It's been 17 weeks since Tony Gittany last served up a meal to the public, and last week in his sparkling new Adelaide Street kitchen he snapped that drought.
"I can't wait to get back cooking," he said. "There have been a few delays because of the Covid lockdown, but we're now ready to go."
Mr Gittany said that equipment delays and a lack of trades people meant that family and friends had to step up.
Tony G's Bistro is at 67 Adelaide Street and will be open from 11am to 8pm Tuesday to Friday, 8am to 9pm on Saturday and 8am to 3pm on Sunday, COVID lockdowns pending.
