During the first wave of COVID-19 in early 2020 Bernardi's Marketplace in Blayney was one of those supermarkets that were hammered by opportunists travelling from Sydney in search of provisions.
Now, though, assistant manager at the store Aaron Randall said they're coping pretty well considering the twin impacts of staff shortages and demand for certain items.
"We have a number of staff that have family that are needing to isolate so they're all doing the right thing by getting tested and staying at home," he said.
Mr Randall said that the community is overwhelmingly doing the right thing when they come into the store.
"Families and couples used to come in and shop but now we're seeing a lot of dads in particular doing the shopping, and people doing the shopping by themselves so they're not overcrowding the store," he said.
In 2020 the shelves were stripped bare of some essentials and this time around, although the demand is high, it's nowhere near as bad, Mr Randall said.
"Our baking aisle has been hit harder than usual as have flour, oil and pasta sauces," he said.
"But people have been really reasonable about the whole thing."

Phil Ryan owns Blayney Tyrepower and because of the nature of the job has closed the store whilst waiting for results to come in.
"We get a lot of truck drivers that come in with flat tyres and we have no idea where they've been," he said.
"We've all been tested as a precaution and to do the right thing, plus we're all half immunised at this point as well."
Owner of the Royal Hotel in Blayney Damon Taylor has also closed the pub and will re-open on Friday with a takeaway menu that will be available until Sunday.
During last year's lockdown he took the time to make a few improvements around the hotel, and once again he's also taking the time when the doors are closed to do a few jobs here and there.
"We're going to close on Monday and Tuesday to give the place a really good clean, the carpets and things like that, because it's really hard to do that when you're open seven days," he said.
