"I could see the demand and the opportunity in Blayney and this is the perfect place for a restaurant," said Tony Gittany, otherwise known as Tony G, in the dining area of what was once the Billy and Me café.
Mr Gittany said that the food on offer will be very similar to what he served up at the Railway Hotel, and will be including some of the most popular dishes from there.
"I have a Lebanese background so will be serving up the same Lebanese platters and dishes that I used to cook as well as some Italian food including pizzas," he said.
With the town well serviced by three hotels, Mr Gittany said that Tony G's Bistro will suit those that are looking for somewhere different to eat and meet.
"We put out a survey and people said that Blayney needs a new place to dine, somewhere that's relaxed and comfortable and not in a pub," he said.

The venue is much larger than what he had at the Railway Hotel, and he's managed to hold onto his staff from there, but is looking for extras.
"Staff is really hard to find at the moment and because this is a bigger venue we're looking for a few more people to work," he said.
Mr Gittany said that he'll be offering a full breakfast menu on Saturdays and Sundays.
Currently he hopes that with all the kitchen renovations going to plan he plans to open towards the end of July, early August.
