Duntryleague board chair John Cook said the restaurant was "inundated" over the weekend, and all rooms at the venue were full as bans on regional travel were lifted.
The venue has been shut down since March, like most across Orange, and Mr Cook said it was returning to normal and staff were expected to be back at full time hours in coming weeks.
"We were very lucky we got JobKeeper, that helped us get back on track and if we didn't have that a lot of businesses would have shut down," he said.
Mr Cook said there was "still a bit of hesitancy" from people not wanting to go out, while other sections of the community were part of the dozens of people calling the second restrictions lifted.
"We've got three different parts of the restaurant so we can get 100 people basically eating at any one time - 40 in the main part of the restaurant, 40 in the Dalton room and 20 in the front," Mr Cook said.
"It comes at a cost, it's a lot more expensive to run three sites than it is to run one, we lose a lot of profit out of that because you've to service there, but now we can pay the bills which would have needed to be paid anyway."
He said while weddings had dried up over the past three months, uncertainty over restrictions and regulations made it hard to plan for upcoming booked weddings.
"There's forward bookings but we've got no idea what the world's going to look like in two weeks let alone two months."
"At the moment we can only guarantee 40 guests [at receptions] because of social distancing."
He said golf had been as busy as he'd ever seen it as people "have more time on their hands", and while the golf club had had to adapt getting food and drink to golfers and booking tee times, the sport had been hugely popular during shutdown.
