Coffee Rush owners Travis and Kelly Kerry have just opened the store adjacent to the Orange Cellars bottle shop at the former Kelly's Hotel in Lords Place.
Mr Kerry said they had planned to open in February but had delayed until this week due to the impact of the lockdown.
"We were planning to open just before COVID came out, in mid-February," he said.
Mr Kerry said they felt unique in being a business that opened, rather than was forced to close, due to the affects of the pandemic.
"We've managed to employ three people during COVID-19, whereas most other people have been laid off," he said.
"All three [new staff members] were in hospitality and had been laid off."
He said the business was unique as it enabled people to drive their car, ride a bicycle or walk in to buy a coffee or food.

Opening at 5am Monday-Friday (and later on weekends) he said they were serving tradies and miners early, mums on school runs and "mums and bubs" mid-morning.
Mr Kerry said they were pleased with the initial response since Monday.
"We've had some really great support from the community," he said.
Mr Kerry said a drive-through service offered parents the convenience of not having to leave their cars to order food and drink, particularly if they had children in the car.
"You don't have to get out of your car," he said.
He said having the coffee shop on one side of the driveway and the bottle shop on the other had allowed the two businesses to complement each other.
Mr Kerry said some people had ordered from both but generally the early trading hours of the coffee shop was enabling it to be finished each day before the bulk of the trade for the bottle shop arrived.
Both businesses are opening seven days a week.
While they also own Central West Plastering the couple have a background in hospitality.
A development application for the project was lodged with Orange City Council last September.
It was subsequently approved by council.
