Anna Franceschini will open Dolce Sweets and Treats at the site of the previous lolly shop in Pym Street.
"I'm a beauty therapist and I've recently moved to Forest Reefs just outside of Orange," she said.
"I was looking for something different to do other than beauty and I came across the shop and saw it was empty and I have got a shocking sweet tooth.
"Also I love Millthorpe, I think it's a beautiful little village, I'm drawn to it and it just felt right."
The shop will continue to stock the old favourites but Mrs Franceschini said she also plans to introduce some lollies from her childhood including lollies from Europe, and Italy in particular.
"I know the sweet shop has been there for years and years, it will be a dedicated sweet shop," Mrs Franceschini said.
"I have some ideas on what to do in the future."

Mrs Franceschini said she has also been working with previous lolly shop owner Linda Williams, who is continuing to operate her other art and artisan based-business next door at the shed.
"She's told me what I cannot go without," Mrs Franceschini said.
However, due to coronavirus some stock is limited due to delivery delays.
Tea shop says thanks to health workers
The Alley LuJiaoXiang tea shop at Orange City Centre will offer 50 per cent off its full menu for frontline healthcare providers on Friday.
Business owners Sasi Sikares and Lee Bargwanna said they wanted to show their appreciation for medical personnel during the COVID-19 crisis.
Eligible healthcare workers will be able to claim the half-price discount by showing their healthcare ID or when in uniform.
Eligible workers will include paramedics, doctors, nurses and aged care workers.
The shop will be open from 10.30am to 3.30pm on Friday.
Virtual seafood school spreads to region
The Sydney Seafood School has branched out to Orange following a distribution arrangement with Harris Farm Orange.
The cooking school is running online cooking classes through SSS@Home.
Due to coronavirus restrictions, the Sydney Seafood School took its hands-on Friday night cooking classes online, along with its presenters, who include some of Sydney's top chefs.
Due to the new distribution arrangement it has also extended the virtual cooking classes to residents in Orange and surrounding areas.
SSS@Home is a will include an instructional video, kit of fresh ingredients, and step-by-step instructions for participants to follow.
