The sandwich shop will be the last business to open as part of the Orange City Centre redevelopment.
Jovie Bargwanna owns the business along with her husband Gary and son Lee and said she was relieved and "really happy" the shop is opening after going through many hurdles.
"We are all happy," she said.
"We were meant to have a refurbishment anyway so when they offered us a good deal [to move across the road] we said 'why not'."
Mrs Bargwanna said the family has had a Subway shop in Summer Street for about 15 years and another one at north Orange for about 10 years.
Mrs Bargwanna said everything in the shop would be new and among the equipment was a drink machine that is the only one of its kind in the Central West and it will include ice, which was a popular request at the previous shop.
By moving to the north side of the street Mrs Bargwanna said there would be more sunlight in winter and in Summer months tables and chairs could be set up outside, depending on coronavirus restrictions.
However, in the meantime she said the store would maintain social distancing measures and shop hours would run on a trial basis depending on the customer response.
"Most of our customers they are just takeaways, they just grab their food and go," she said.
As well as having a new shop, Mrs Bargwanna said she was pleased to give employees work again.
"A lot of them stopped working because we could only put so many people to work," she said.
Mrs Bargwannna has also been working at the family's Subway shop at north Orange and said people approached her every day asking when the Summer Street shop was going to open.
"It's so hard for people who work in Summer Street when there's no Subway there and they are looking for healthy options," she said.
At this stage delivery services will not be offered.
