Owner Ed Hattersley is planning to open a drink lab and tasting room in the former Smolle's auction house in Peisley Street.
While he works on getting that off the ground he is opening the coffee cart in a shipping container outside the auction house on Monday with half-priced coffees for the first five days.
"We are aware of the amount of competition in the coffee space, however, we feel coffee is something that will compliment our drink lab and tasting room which is a key part of the Mad Hatter business," he said.
He is also launching an on-demand alcohol delivery service ISOBOOZE, which will have live tracking capabilities for wines and craft cocktails, and it can include lasagne.
"To assist with everything happening around us and the little roadblocks we face we thought it could be cool delivering booze and homemade lasagne to your door," Mr Hattersley said.
"We just wanted to try something different until businesses can return to normal."
