Central West Police District Chief Inspector Dave Harvey said the victim suffered a split top lip.
"He was at the location with friends. An offender has randomly punched the victim in the face," he said.
"Witnesses intervened. The offender left the hotel and police were called."
Chief Inspector Harvey said the offender was described as being caucasian, about 170cm tall of medium-large build with a "brown mullet-style haircut."
He said the man was wearing a watermelon-coloured collar shirt.
In a separate incident at a different hotel in Summer Street another assault occurred at 11.40pm on Saturday night.
Chief Inspector Harvey said two men became involved in an argument.
"The offender head-butted the victim causing him to fall to the ground," he said.
Chief Inspector Harvey said the victim sustained a large bump to the head and a small cut but refused to go to hospital or talk to police.
