Spilt Milk Bar will donate $1 from every scoop to the RFS this Saturday and firefighters in uniform will be eligible for a free gelato.
Owner Andrew Hamilton hoped to raise up to $1500.
"We're going to go for it the whole day until 10pm," he said.
"This whole fire thing has just been so bad and we just wanted to do our bit to help."
Mr Hamilton said even though there had been no major bushfires close to Orange so far this season, RFS volunteers had been battling blazes on the coast and it had taken an emotional and financial toll.
"One hundred and thirty-five days straight they've been working," he said.
"You just never know where there's going to be a fire."
The RFS will decide where the donations are spent.
The appeal will lead into a second in the final week of February, this time for the drought.
Mr Hamilton said the business was familiar with the situation through its relationships with ingredient suppliers.
"Milk prices have gone up and we understand that," he said.
"The price of produce is going up and it's scarce, particularly quality produce."
