Mr Collins, the restaurant manager and sommelier at Charred, said he had been studying wine and the wine industry for several years.
I'll be trying to de-mystify wine.

He said he moved to Orange in 2012 and had been involved with Charred since the restaurant opened in November 2016.
Mr Collins said Charred's extensive 600-plus winelist was one of the largest in the country and had been recognised with awards by national and international food and wine publications.
"This is my first dabble into [wine writing]. I'll be trying to de-mystify wine. I think a lot of people are fearful of it," he said.
"Orange is an exciting emerging wine region. It has got tremendous potential."
Mr Collins said sparkling wine was developing as a key variety in Orange.
"Orange is under-rated but is gaining recognition for high-quality sparkling wine," he said.
