The new owner of Second Mouse Cheese, SJ Pienaar, will be at the flavour forefront.
“As we move forward, we are experimenting with a few different cheeses,” she said.
“They will be exclusively available from the market.”
She said having tastings for customers also helped them develop ideas.
“You get that instant feedback from our customers.”
Ms Pienaar said she was hoping to have a six-month aged premium blue cheese ready for the markets around FOOD Week in April.
Markets president Paula Charnock said the committee wanted to have produce on sale at the markets, which was unique to the event.

“You can get the very latest fresh seasonal produce. A lot of produce you can’t get down the high street,” she said.
“Like the gingerbread man and the salami man it is something you can’t get [elsewhere],” she said.
“It’s just a great one spot where you can get all your fresh vegetables, fresh meat, free range eggs, jams, relishes and more.”
She said she also wanted to attract more Orange residents to the markets in 2019.
“We get lots of visitors from Sydney. A lot of people plan their trip to Orange to be at the Farmers Market. We would like to get new people coming too,” she said.

The market, with about 50-60 stalls, is on from 8.30am-noon at Northcourt.
