MAX Schaapveld can make a good pizza, but burgers are his passion.
The Pizza Capers owner will branch out by early February, establishing Gracie Burger at the former Dutch Embassy premises in Sale Street.
The business will specialise in burgers, shakes, fries and beer, and already has a strong social media following thanks to its commitment to providing gluten-free options.

Mr Schaapveld said he had enjoyed the pizza business for the past three years, but his family looked forward to establishing something “uniquely ours” – the eatery will be named after Mr Schaapveld’s daughter and will draw from the family’s burger experiences.
“I’ve loved burgers for ages – when we travel, I’m always dragging my family into burger places,” he said.
Mr Schaapveld said a great burger was about the patty, then the bun, then the condiments to balance the flavours.

“Ten years ago, it was all about Turkish buns, then two to three years ago it was brioche and these days it’s about the milk buns and American cheese.
“Before it was about what you put in the patty, but now it’s the grind and the quality of the cut.”
He said vegan options would also be explored.
ALPINE TAKEAWAY OWNERS LOOK TO NORTH
AFTER serving up fish and chips to the Bowen area, Yolanta Turbo says she’s ready for a challenge.
Ms Turbo will open the Urban Cup Cafe at North Orange Shopping Centre next month after putting Alpine Takeaway in Dalton Street on the market.
She said the experience had taught her she could run a business.
“We’ve done well and want to press onto somewhere else,” she said.
Taking on the space formerly occupied by Michele’s Patisserie, Ms Turbo saw north Orange as an opportunity.
“It’s a lovely area and it’s growing and I think it has a really good future,” she said.
“It’s a good spot for people to hang out and drink coffee.”
She said the menu would combine traditional offerings with trends.
