In an ordeal that lasted more than two hours, police were called to a house party on Charles Street about 1.30am following a noise complaint, and were met with a group of "highly intoxicated" young people.
Police issued a move-on direction, which was allegedly ignored.
The Public Order and Riot Squad were called in when some members of the party moved back into the house and began throwing bottles at the police, Inspector Grant Watson of Leichhardt Local Area Command said.
"There were more people than police ... and then they retreated inside and started throwing bottles and cans. The general duties police are not equipped with riot shields and so forth to protect themselves from missiles," he said.
During this time, a man also tried to grab an officer's firearm, which led to the clash with the seven who were eventually arrested, Inspector Watson said.
"It was instigated by one of the young people that was there, attempting to take a police firearm, and then, while police were trying to arrest him, others have then come to his [the man's] aid and attacked the police, and it just escalated from there."
Police used pepper spray to disperse the crowd, before arresting the seven, who were all in their 20s.
They were charged with offences including affray, refusing a police direction and resisting police.
A 25-year-old man and a 22-year-old woman were granted bail and will face Newtown Local Court on April 11.
Another three men were granted bail and will appear at Downing Centre Local Court on April 17.
A 25-year-old woman was issued with a court attendance notice for affray and a 25-year-old man was released pending further inquiries.
No police were seriously injured.
