The Lord Anson is expected to open its doors in November.
The city’s newest venue will open in what was formerly the Standard Hotel in Anson Street.
Owners Nick and Emma Bacon and Hugh Mawter are putting the finishing touches on the building.
“Every wood panel has been sanded back and re-stained, it’s freshly painted, there’s new carpet and it’s been re-lit and re-tiled,” Mr Bacon said.
“The building is complete, it’s the fine details like labels on taps, books in shelves and photos on walls.”
New furniture is also on the way.
Despite the amount of work involved, Mr Bacon said he’d take on another project just like it.
“The Union Bank was already a beautiful property, this was, aside from walls, doors and floors … we had to strip it all back and start again,” he said.
“I’ve had days of anxiety, worrying about things not going to plan, the labour pains are almost gone.
“This is the part of the business that really excites me, taking a broken down shell and bringing it to life. That’s where my motivation and adrenaline to keep working comes from.”
Mr Bacon said decor and design was about making people feel comfortable.
“For decades it was the Standard, people will always have fond memories,” he said.
“It’s steeped in history with live music, it’s hard not acknowledge it, but it needs a breath of fresh air.
“I would love people to come in and feel at home, if you look at the pubs of London, they’re built on warmth and comfort. It’s like walking inside the publican’s lounge room.
“If you look at the pub market nationally and across NSW, it’s evolving.
“It’s more than just a stool and a bar, consumers are looking for good food, wonderful aesthetic elements and diversity such as that which is available in craft beer.”
Beer will be sourced from throughout Australia.
Mr Bacon said the Badlands Brewery and Bathurst’s Two Heads Brewery would feature and there will be an ale named after Admiral George Anson.
“Marty Oliver from Borenore Brewhouse is brewing the Admiral George ale,” he said.
