IT has been nearly three years since Kate Bracks was named Australia’s MasterChef but it is only now that she has settled on her culinary future.
Mrs Bracks has installed a commercial kitchen in her home and will launch her business Kate Bracks Baking next month.
“We’ll start off small and see how we go,” she said.
Eventually she will sell her food online but will initially take phone orders, which can be picked up from Essential Ingredient.
“I’m going to start off making whole cakes like lemon meringue dessert cake or seeded carrot and walnut cake,” she said.
“I’ll also make seasonal cakes like roasted rhubarb cake or pear, espresso and hazelnut cake.”
Eventually Mrs Bracks will expand her range to include desserts and baked goods.
Mrs Bracks said she took time off from her cooking commitments last year to think about the direction her career would take and was pleased to come up with a solution that allowed her to spend time with her family and indulge her love of cooking.
“I also wanted to invest in the local community,” she said.
“This lets me work around the kids and make the most of Orange’s beautiful local produce.
“It’s given me a sense of peace, knowing what the future holds.”
Mrs Bracks will continue to sell produce at markets including the farmers’ markets.
In the long-term Mrs Bracks plans to open a bed and breakfast, but she is in no rush.
“The kids are still young and it really doesn’t fit in with my stage of life very well, but the property where we live has the capabilities for it.”
