The Javid Square Meaters stud, near Orange, had stunning success with a purebred steer entered into the “hoof and hook” competition, which includes judging of the live animal and then of its carcass.

The steer, exhibited by St John’s College in Dubbo, placed fourth in the live judging, but scored 90.5 on the hook, making it one of just six animals to be awarded a gold medal.

After the on-the-hook judging, the steer was sold to supermarket chain Woolworths for $15/kg.

Javid Square Meaters owner Wayne Petrie says the ideal animal can be difficult to find.

“It’s really about their muscularity, ability to put fat on, but not too much fat,” he said.

“Our weight was good, our fat scans were really good, so we thought we were in with a chance.”

Competitions can include a virtual taste test section, where a computer evaluates the tenderness and juiciness of the meat.

Breeders strive to end up with animals that any butcher, and indeed any diner, would be happy to see in front of them.

“You’re breeding the ideal butcher’s specification,” Mr Petrie said.

This is the first time Javid Square Meaters has entered the show since the stud was established in 2011.
