ORANGE mum Vanessa Wardle wanted to make her children’s birthdays extra special by creating customised cakes but each year they had to become bigger and better.

The pattern culminated with a My Little Pony- Rainbow Dash- in a karate suit, sitting on a cupcake with a rainbow.
“My worst clients are my kids” said the mother of two girls.
She pulled off the almighty pony cake three years ago and knew she had a talent for fondant.
That talent was recognised at the inaugural Australian Cake Decorating Championships held on March 22 where she landed herself the runner-up spot.
“By the time I had driven back from Sydney, I’d talked myself out of winning anything,” she said. But this cake (pictured) was deemed the best in the masters’ section for wedding cakes, which was one of the categories during the competition.
Over 100 cake decorators competed from across the country and the winning cake took over 100 hours to complete.
The theme for the wedding cake challenge was a freestyle design for a traditional bride for a spring-themed wedding.
Mrs Wardle hand piped the lacework to create a suspended in air look surrounded by Spring flowers.
The display cake is made on a styrofaom base and the competition required Mrs Wardle to create a tasting cake using the same icing but instead of the traditional fruit cake she made a lemon, lime and orange cake to fit in with the spring theme.
She said fruit cake had well and truly gone out of fashion and had made three in the five years.
Children’s cakes are her passion but wedding cakes are where her true talent lies but there has only been one creation which made her nervous.
“One of the most difficult ones was the Eiffel Tower ... there was a lovely young girl who was turning 21 and she wanted a travel cake,” she said.
“There was a teddy bear on it with an Australian flag and edible images of her in her travels.”
