Karl Sibley was arrested in Cumnock on Sunday afternoon on charges of recklessly inflicting grevious bodily harm.
His alleged victim, a 19-year-old man, is fighting for his life in Westmead Hospital where, according to police, his condition has deteriorated.
Sibley's solicitor Matthew Savage on Monday applied for bail, saying his client's behaviour was out of character.
In his submission Mr Savage said his client was on a part disability pension because of his ADHD condition.
"His family are devastated," Mr Savage said, noting the accused's mother had spent Sunday night with her son in police cells.
Sibley had been visiting his family in Cumnock and doing casual farm work in the area.
Registrar Olivia Lee refused bail and stood the case over in Orange Local Court until Thursday.
However Mr Savage asked for his client to be granted a bail hearing in Wellington Local Court on Tuesday to minimise any time his client would spend in custody, which Registrar Lee granted.
The victim was stabilised at Orange Hospital on Sunday before being flown to Westmead for specialist treatment.
